Broccolini at the markets

Roast broccolini tortilla
Seeing as I received a massive box of it I’ve been trying a couple of other ideas of my own (after I gifted a few bunches to mum – there’s only so much Broccolini Will and I can eat). One night I roasted a bunch of it and scattered them over a tortilla after I added the egg. The little bit of crunch was scrumdidily and it was nice cold the next day for lunch too.
Broccolini, feta and dukkah
For lunch one day I blanched a bunch and served it topped with feta, dukkah and some olive oil. It was maybe a little bit too much Broccolini for a meal but would have been perfect as a summer side dish.
Broccolini, pancetta, garlic and chili spaghetti
A couple of weeks ago I had lovely dinner at The Red Hen at West End. I had such a tough time choosing between all the delicious-sounding pastas on the menu but the one I was most jealous of was the broccolini and pancetta penne. I think I did a pretty good job of recreating it. Just a few simple ingredients and dinner was ready!
While the pasta was cooking I fried up the pancetta and garlic in a little olive oil then added about 1/2 a cup of white wine and let it reduce. Just before the pasta was ready I threw in the broccolini and put the spaghetti on top then tossed it all together with some chili flakes.

I love broccolini. Freshly steamed with a squeeze of lemon if I’ in a hurry. In a little tart if I’m feeling clever. I always try to recreate restaurant meals and sometimes I’m successful.
