Last week I ran out of rolled oats. I know, not a big deal to most people but I love my apple and cinnamon oats for breakfast. Not wanting to go to the shops just for oats I went searching in the pantry and found a bag of brown rice. Brown rice and oats seemed pretty similar to me and so sweet brown rice was born. I did a little googling and found a recipe for brown rice pudding and based my breakfast on that. The added bonus is that this recipe is gluten free so suitable for coeliacs.
To make the ‘porridge’ you need to start by cooking the brown rice. Cook it on the stove according the packet instructions.
It takes about 30 minutes to make the rice so it’s a good idea to make a big batch and freeze it in portions.
To make the porridge, mix one cup of cooked brown rice with one cup of low-fat milk and the cinnamon.
Add the chopped apple and a spoon full of honey and stir it all through. Bring the pot to the boil then reduce to a simmer and cook the porridge over low heat, stirring frequently until it thickens and absorbs the liquid.
Serve the porridge with a little extra milk. Enjoy!
Brown rice porridge based on recipe from Low calorie ideas
- 1 cup of cooked brown rice
- 1 cup of low-fat milk
- 1 tbsp of honey
- 1 tsp cinnamon
- 2 apples, cored and diced
Place the rice and milk in a saucepan and add the cinnamon. Stir it through.
Add the apple and honey to the pan and stir them through. Bring the pot to the boil then reduce to a simmer.
Cook, stirring frequently, until the milk has all been absorbed.
Serve with extra milk.
