If you’re looking for a relatively light and refreshingly delicious summer dessert then look no further. The passionate strawberry parfait is easy to prepare, tastes fantastic and looks very pretty.
Fresh colourful ingredients are what make this the perfect summer dessert.
First step – hull and chop the strawberries and place in a bowl with the passionfruit. Add a tablespoon of chopped mint and a tablespoon of Grand Marnier (orange liqueur). Leave this in the fridge to let the flavours develop for a couple of hours.
Crush meringue into small pieces and set aside (you can do this at the last minute). I used meringue nests that you can get at the supermarket but homemade would be even better.
Using tall glasses, start with a scoop of the fruit mixture, half a scoop of low-fat vanilla icecream, a sprinkle of meringue and repeat finishing with the fruit mixture. Top it off with a slice of almond bread, biscotti or whatever your heart desires. Enjoy!
Passionate strawberry parfait
makes 8, approximately 100 calories per serve (not including almond bread)
- 1 punnet of strawberries
- 2 passionfruit
- 1 tbsp Grand Marnier
- 1 tbsp chopped mint
- 8 scoops of low-fat vanilla icecream
- 5 meringues
- 8 piece of almond bread (or similar) to decorate
Chop the strawberries and place in a bowl with the passionfruit, Grand Marnier and mint. Stir to combine then refrigerate for a few hours.
Crush the meringue and set aside.
Layer fruit mix, ice cream and meringue into tall glasses and top with a slice of almond bread.
